Sambal oelek is an original, Thai sauce made from sweet red chili peppers. It has an intense, distinct, sour-salty taste. It's often used as a substitute for chilli. Perfect for meats as well as dishes with the pasta. Its spiciness can be lowered by adding a bit of hot water or coconut milk.
